In 2000, a quality-certified pressing center was built as an extension of the old cellars. Modern technologies merge with tradition in a constant search for perfection. From the sorting out of grapes to the automatic press and to a strict control of fermentation temperatures, each step of the wineprocessing benefits from the greatest care. The equivalent of half a harvest is stored as reserve wine and each cuvée matures in bottles for several years.
